LE CORDON BLEU STUDENT-RUN RESTAURANTS COME TOGETHER UNDER TECHNIQUE NAME

Hoffman Estates, Ill. (Nov. 30, 2010) — Le Cordon Bleu (LCB), a leading provider of culinary education, is proud to unveil each signature, LCB restaurant under one name — Technique. The student-run restaurants located at 14 LCB campuses throughout the country are open to the public and play an integral role in current students’ education.

"The name reflects our philosophy of simple, elegant menus inspired by classic cooking techniques," said Executive Chef Edward Leonard. "The restaurants offer a great opportunity for the public to taste and see what future culinary professionals are cooking at Le Cordon Bleu."

Technique restaurants offer gourmet dishes on a prix fixe menu, including a three-course for lunch for $10, a three-course dinner for $12 or five-course dinner for $15. The restaurants present a straightforward menu inspired by classic cooking techniques, giving the students an opportunity to practice what they’ve learned in the craft of cookery. The restaurant also focuses on using the finest ingredients from high-quality, sustainable local sources.

Each Technique restaurant is student-run and serves as a capstone course for current associate-degree students as part of the LCB hands-on curriculum. Under the supervision of an experienced chef instructor, students are given the opportunity to hone their front-of-the-house and back-of-the-house skills.
