This Monday on Masterchef we had a repeat from last week's episode, during to President Obama's Address to the Nation. After the speech, we had a chance to see the mother of all challanges. Let me give you an inside scoop on two of the dishes that were shown on yesterday's episode. Our team made a polenta salad with wriggle, cucumbers, tomatoes, and a honey vinaigrette. The secret to making a polenta that you can grill is the thickness of the polenta. You want to whisk the polenta until it has a cement-like consistency. Then pour into a sheet pan, smooth out the polenta until it has an even thickness in the sheet pan. Place parchment paper on top of another sheet pan so that the weight can distribute evenly. Place into refrigerator for 1 hr and use a circle ring mold to cut out the shape that you would like for the salad. Then place the shaped polenta onto an oiled grill top
and sear off both sides and serve. In the mother sauce pressure test challenge, we made a hollandaise sauce with poached eggs, seared ham, and English muffin. The secret to poaching a perfect egg, in my opinion, is the Julia Child's technique. First pierce a small hole at the top of the egg( the smallest end) and place into simmering water for only 30 seconds. Take the egg out and increase the heat to small bubbles. Then add 2 tsp of white wine vinegar to the pot and crack the egg immediately over the top, you will notice that the egg will have a perfect football shape consistency. Let the egg cook for 4 minutes and place on top of the layers of english muffin and toasted ham. Season the egg with Kosher salt and Black Pepper Take a heaping spoon of the hollandaise and lay over the poached egg. Serve immediately.
