Christmas Breakfast Good Enough to be Under the Tree
If Christmas at your house is as hectic and busy as Christmas at most houses, then Christmas breakfast may not be high on the list of priorities for the morning. Between opening presents, cleaning up the discarded wrappings, and getting ready to go to grandma’s house, there just isn’t a lot of time left for a fun, delicious holiday breakfast. Or is there?
If you put your mind to it, you can come up with more Christmas breakfast goodies than treats in your stocking without having to be cooking school graduate. Take a look at these delicious breakfast options that won’t have spending the whole morning in the kitchen instead of spending it with the family.
Overnight Oatmeal
Who doesn’t love a hot bowl of oatmeal on a cold winter’s day? The boxed stuffed, however, is full of additives and excess sugar. This delicious recipe is both nutritious and easy to make. Start with steel cut oatmeal, add water, half and half, and your favorite dried fruit like figs, apples, and cranberries.
Christmas Morning Casserole
Long the staple of busy kitchens, you can prepare most of this casserole the night before and simply pop it in the oven in the morning. Start with some day-old bread of your choice and break it into cubes, pour in an egg custard mixture, add some browned breakfast sausage, dice some festive green and red peppers (try some chipotles for some smoke and spice), add chopped onions, and a layer of cheddar cheese. Place in the fridge and put it in the oven while everyone is opening presents.
Eggnog Smoothies
Take that extra eggnog from your Christmas Eve dinner and serve it for breakfast. Add some yogurt, a splash of apple cider, and your favorite fresh or frozen fruits. Try bananas, strawberries, and raspberries. If using fresh fruit, throw in a handful of ice. Top with a dollop of whipped cream and ground nutmeg to make it a true holiday treat.
Cinnamon Raisin Eggnog Muffins
Replace the milk or buttermilk from your favorite muffin recipe and add an equal amount of eggnog. Add a cup of raisins and swirl in some freshly ground cinnamon to make these muffins irresistible.
Fresh Fruit Cups with Green Whipped Cream
Christmas is often a day of heavy eating so you might want to go light on breakfast to save room for all the great treats to come later. Add fresh raspberries, blueberries, and dried sweet cranberries to a half dozen or so sliced peaches. Serve in individual bowls and topped with green whipped cream made with a dash of green food coloring.
These simple recipes can be made ahead of time or in time at all on Christmas morning. And the best part is that you don’t have to have attended a cooking school in Portland to prepare. After all, Christmas is about enjoying time with your family and spending all morning in the kitchen.
