How to Make Tapenade

Tapenade is an elegant spread that’s much easier to make than it sounds.  This traditionally Mediterranean or Greek spread has very few ingredients, but packs a punch when used on bread, crackers or occasionally as a stuffing for fish or chicken. Here’s how to make this delectable spread.

Ingredients

The base ingredient to Tapenade is the olive. Black olives are most commonly used, but green olives can be substituted if you prefer.  The next ingredient would be capers, then olive oil and anchovies can be added. Depending on your flavor pallet you can also other ingredients such as garlic, lemon juice, brandy, artichokes, and assorted herbs. If you favor a spicier dish, chili powder or red pepper flakes can be added.

Making your Tapenade

Step 1: Start with finely chopped or minced olives and capers.  A good ratio to start with is one tablespoon of capers to every cup of pitted olives.  Either chop them by hand or in a food processor, it’s your choice.

Step 2:  Add your Olive Oil and Anchovies and other ingredients.  The key ingredients are relatively salty, with Tapenade you do not need to add extra salt. 

Step 3: Mix until desired texture. Some people prefer a smooth spread and others like their Tapenade to be on the chunkier side. 

Storing your Tapenade

After mixing and making your Tapenade, you can store it in a glass jar in a refrigerator for up to one week.

It doesn’t matter if you’re using Tapenade as a spread hors d’oeuvres, as a filling, or as a pizza sauce, it’s a tasty spread that’s very simple to make.
