So we are down to the top 10 and boy was last week an intense week! We had the pleasure of working with the most decadent ingredients on Monday's Episode, which included both Lobster as well as $500 truffles! What you didn't know was that the truffles were flown all the way from Italy that morning. The culinary team literally used a toothbrush to scrape the truffles so that it would be perfect for the challenge. Insider View: So when you work with truffles, you want to shave off the truffles at the very end of the dish so that the smell of the truffles allure the customer to try/enjoy the food. Don't be afraid to use the necessary amount. In this challenge, many of us were afraid of over using the truffles. Giuseppe used the truffles best because not only did he make decadent pasta with truffles, but he used the golden rule for truffles and shaved the truffles at the very end on top of the dish. In the mother of all challenges, the kitchen that we worked in was truly beautiful. We had the head chef in the background watching us use his kitchen with respect as we created our dishes. You can now find the Poached Pear with mascarpone cheese, vanilla, honey dessert at Le Cordon Bleu under the MasterChef Cooking Classes.
