Making the Most of Winter Vegetables
When it comes to fresh vegetables in the winter, many may wonder “is that even possible?,” but if you live in Sacramento, you are at a definite advantage. Sacramento, California culinary options during the winter and early spring months surpass nearly every other state as far as fresh produce goes. If you are in any other part of the country, many of the fruits and vegetables you buy in the store during these months probably come from California. If you aren’t sure what to look for, here are 4 of the best winter vegetables to add to your pantry.

Carrots
Carrots are extremely versatile in both the conditions that they can grow in and in the different tastes they take on depending upon preparation. They make great healthy snack options if your New Year’s resolutions are still being kept and they have more of a candied flavor when cooked with butter (if your resolutions are long gone).
During the time or year that colds and flu bugs are running rampant, the vitamins and nutrients found in carrots can give you that extra boost!
Broccoli
Broccoli is another veggie that can make a great snack or can also be prepared as a side dish just as easily. With high levels of fiber, low levels of fat and tons of nutrients, broccoli is the ideal winter vegetable. Many choose to parboil broccoli to make it more palatable while locking in the nutrition. Parboiled broccoli works well as a side dish on its own or sprinkled with salt, pepper and a bit of olive oil or lemon juice.
Artichokes
Perhaps it’s a throwback to our long ago ancestors, but typically we love eating things without fingers! Artichokes are easy to cook and are a satisfying appetizer or snack that you can eat anywhere. Once the artichoke is boiled simply pull off the individual leaves and enjoy the “meaty” part at the base of each. Make a melted garlic butter dipping sauce and you are all set for a wintery day of bliss.
Beets
For some reason, beets seem to have gotten a bad reputation. If you have never tried a grilled beat, you are missing out. Fortunately, beets grow well in the winter and are really easy to prepare! If you are craving something sweet but want to eat healthy, simply slice up a beet, brush with olive oil and grill until soft. The rich and vibrant color is also a great addition to a winter salad or appetizer platter.
