Cracked Wheat Salad with Shrimp and Tomatoes
2 cups boiling water
1 cup cracked (bulgur) wheat
3 tablespoons olive oil
3 tablespoons lemon juice
2 coves minced garlic
12 ounces cooked shrimp, peeled, deveined and chopped
¾ pound red tomatoes cut into ¼ inch strips
¾ pound yellow tomatoes cut into ¼ inch strips
1 seedless cucumber diced
¼ cup small diced red onion
½ cup chopped scallions
½ cup fresh basil
¼ cup mint
2 tablespoons dill
Salt and pepper to taste
