Balsamic Roasted Strawberries

Serves 6

1 quart of fresh strawberries, washed and trimmed
3 tablespoons unsalted butter
1/3 cup balsamic vinegar
2 tablespoons sugar
vanilla ice cream or strawberry sorbet

  • Preheat the oven to 400º.
  • Lightly grease a baking dish and place the strawberries cut side down.
  • Combine the balsamic vinegar and butter in a small saucepan and heat until butter is melted. Stir to combine.
  • With a pastry brush, apply the balsamic/butter mixture to the strawberries.
  • Sprinkle the berries with the sugar.
  • Bake until berries are soft, about 10 minutes, brushing with the pan drippings once or twice.
  • Place vanilla ice cream or strawberry sorbet into martini glasses. Layer the roasted strawberries and their pan juices over it.
  • Serve immediately.
