Spicy Mango Salsa

3 lg. Mangoes, about 2 ½ cups, ¼ inch dice
1 medium Red Onions, 1 ¼ cup, sm. dice
1 red jalapenos, minced
1 Tbs. Sambal Oelek or Chile garlic Sauce
½ Tbs Ginger, minced
½ cup lime juice
Salt and pepper

1. Combine all ingredients in a glass or stainless steel bowl. Mix well. Let stand at least ½ hour before serving
