How to Make Turkey Meatloaf

Does this sound familiar in your family?  Monday – Chicken, Tuesday – Pasta, Wednesday – Pork Chops, and on it goes through the rest of the week. If so, then you are stuck in a cooking rut. You know what your family likes and you know that you are all very busy and don’t have much time for dinner together. The predictable menu is your tool to manage time, tastes, and budgets.

But let’s face the facts. It is boring. Your bored cooking the same rotating menu, and your family is bored eating the same things over and over. You want to shake it up. You want to break out of the rut, but how? What can you make that won’t take too long and have everyone agree on.

What about meatloaf?
Yes, what about meatloaf, that staple of the 1950s TV sitcom housewife. No, I’m not kidding. Meatloaf. But not just any meatloaf made with the cheapest ground chuck that Sam the Butcher sells. I mean turkey meatloaf with a Middle Eastern flair. The leaner turkey meat will not only provide a welcome change to ground meat, but it is healthier with less fat and calories per serving. After all, turkey isn’t just for Thanksgiving any more.

Easy Turkey Meatloaf Recipe
There are quite a few ingredients to this recipe, but all are common household spices. If you don’t have any of them, your local grocery will have them all in stock.


  • 1 ½  lbs. lean ground turkey
  • 1 egg
  • ½ cup onion, minced
  • ½ cup seasoned breadcrumbs
  • ¼ cup ketchup. Try a flavored ketchup like chipotle or Tabasco for additional flavor
  • 2 cloves garlic, minced
  • 2 teaspoons dried parsley
  • 1 teaspoondried marjoram
  • 1 teaspoon paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 1 teaspoon olive oil
  • 1 ½ teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper


  • Preheat oven to 350 degrees F
  • Sauté onions in olive oil over medium heat until they become translucent. Remove from heat
  • Mix all ingredients in a large bowl
  • Place mixture into a 9x12 loaf pan
  • Bake uncovered for one hour

To add even more zing to your turkey meatloaf, try chopping up one or two of your favorite peppers and adding them to the mix. Anaheim, poblano, and pasilla chilies are some of the most flavorful without being overwhelmingly hot. And if you just can’t do without the pork fat, try chopping and browning two or three slices and adding them too.
